  • Zucchini - 2 medium, spiralized
  • Fresh mussels - 500 grams, cleaned
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they begin to soften.
  3. Add the cleaned mussels to the skillet along with the lemon juice, salt, black pepper, and red pepper flakes (if using). Cover the skillet and steam the mussels for about 5-7 minutes, or until they open up.
  4. Once the mussels are cooked, remove the lid and toss in the spiralized zucchini. Stir gently to combine and cook for an additional 2-3 minutes until the zucchini is slightly tender.
  5. Remove from heat, garnish with chopped parsley, and serve immediately.
