Steps
- Preheat your oven to 220°C (428°F).
- In a bowl, toss the diced eggplant, zucchini, and bell pepper with 1 tablespoon of olive oil, salt, pepper, and dried oregano. Spread the vegetables on a baking sheet and roast for 15-20 minutes until tender.
- While the vegetables are roasting, roll out the pizza dough on a floured surface to your desired thickness. Transfer it to a pizza stone or a baking tray lined with parchment paper.
- Spread the tomato sauce evenly over the rolled-out dough, leaving a small border around the edges.
- Evenly distribute the roasted vegetables over the tomato sauce, followed by the sliced red onion.
- Tear the mozzarella cheese into pieces and scatter it over the top of the pizza.
- Drizzle the remaining tablespoon of olive oil over the pizza.
- Bake in the preheated oven for 10-12 minutes or until the crust is golden and the cheese is bubbling.
