- Whole wheat flour - 250 grams
- Warm water - 180 ml
- Active dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Tomato sauce - 100 grams
- Mozzarella cheese, part-skim - 150 grams
- Bell pepper, diced - 50 grams
- Red onion, sliced - 30 grams
- Zucchini, sliced - 50 grams
- Black olives, sliced - 30 grams
- Dried oregano - 1 teaspoon
- Fresh basil leaves - a handful
Steps
- In a small bowl, combine the warm water and yeast. Let it sit for about 5 minutes until it becomes frothy.
- In a large mixing bowl, combine the whole wheat flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a lightly floured surface for about 5 minutes until smooth.
- Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, punch it down and spread it out onto a greased rectangular baking pan (approximately 30x20 cm).
- Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
- Sprinkle the mozzarella cheese over the sauce, followed by the diced bell pepper, sliced red onion, zucchini, and black olives.
- Sprinkle dried oregano on top and drizzle a little olive oil if desired.
- Bake in the preheated oven for 20-25 minutes or until the crust is golden and the cheese is bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before slicing and serving.
