  • Vegetable broth - 250 ml
  • Kalamata olives - 50 grams, pitted and sliced
  • Capers - 1 tablespoon, rinsed and drained
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat. Add the diced red onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and diced bell pepper to the pot. Cook for an additional 2-3 minutes until fragrant.
  3. Stir in the chopped cauliflower, canned diced tomatoes (with juices), vegetable broth, sliced olives, capers, oregano, salt, and black pepper.
