- Kalamata olives - 50 grams, pitted and sliced
- Capers - 1 tablespoon, rinsed and drained
- Dried oregano - 1 teaspoon

- Fresh parsley - for garnish
Steps
- Heat olive oil in a large pot over medium heat. Add the diced red onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and diced bell pepper to the pot. Cook for an additional 2-3 minutes until fragrant.
- Stir in the chopped cauliflower, canned diced tomatoes (with juices), vegetable broth, sliced olives, capers, oregano, salt, and black pepper.
- Bring the mixture to a gentle simmer. Cover and cook for 15-20 minutes, until the cauliflower is tender.
