Ingredients
- Cauliflower - 1 medium head (about 600g)
- Extra virgin olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 200g, halved
- Kalamata olives - 100g, pitted and sliced
- Capers - 2 tablespoons, rinsed and drained
- Dried oregano - 1 teaspoon
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Parmesan cheese - 30g, grated
Steps
- Preheat the oven to 220°C (425°F).
- Remove the leaves from the cauliflower and cut it into florets.
- In a large bowl, toss the cauliflower florets with 2 tablespoons of olive oil, minced garlic, oregano, red pepper flakes, salt, and black pepper until evenly coated.
- Spread the cauliflower on a baking sheet in a single layer and roast for 20 minutes, or until golden and tender.
- While the cauliflower is roasting, in a separate bowl, mix the cherry tomatoes, sliced olives, capers, and remaining 1 tablespoon of olive oil. Season with salt and pepper to taste.
- After 20 minutes, remove the cauliflower from the oven and add the tomato mixture to the baking sheet, tossing everything together.
- Return to the oven and roast for an additional 5-7 minutes, until the tomatoes are softened and slightly blistered.
- Remove the baking sheet from the oven and sprinkle the dish with chopped parsley and grated Parmesan cheese before serving.
