Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Extra virgin olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200g, halved
  • Kalamata olives - 100g, pitted and sliced
  • Capers - 2 tablespoons, rinsed and drained
  • Dried oregano - 1 teaspoon
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese - 30g, grated

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Remove the leaves from the cauliflower and cut it into florets.
  3. In a large bowl, toss the cauliflower florets with 2 tablespoons of olive oil, minced garlic, oregano, red pepper flakes, salt, and black pepper until evenly coated.
  4. Spread the cauliflower on a baking sheet in a single layer and roast for 20 minutes, or until golden and tender.
  5. While the cauliflower is roasting, in a separate bowl, mix the cherry tomatoes, sliced olives, capers, and remaining 1 tablespoon of olive oil. Season with salt and pepper to taste.
  6. After 20 minutes, remove the cauliflower from the oven and add the tomato mixture to the baking sheet, tossing everything together.
  7. Return to the oven and roast for an additional 5-7 minutes, until the tomatoes are softened and slightly blistered.
  8. Remove the baking sheet from the oven and sprinkle the dish with chopped parsley and grated Parmesan cheese before serving.
