Ingredients

  • Dairy-free ricotta (almond or coconut) - 250 grams
  • Powdered sugar - 100 grams
  • Vanilla extract - 1 teaspoon
  • Candied orange peel - 30 grams, chopped
  • Candied lemon peel - 30 grams, chopped
  • Almond extract - 1/2 teaspoon
  • Sponge cake (dairy-free) - 100 grams, cut into thin layers
  • Almond milk - 50 ml
  • Dark chocolate (dairy-free) - 50 grams, melted
  • Sliced almonds - 20 grams, for topping

Steps

  1. In a mixing bowl, combine the dairy-free ricotta, powdered sugar, vanilla extract, almond extract, and chopped candied fruits. Mix until smooth and well combined.
  2. Prepare a small cake mold or dish by lining it with plastic wrap, leaving some overhang for easy removal later.
  3. Layer the bottom of the mold with a layer of sponge cake. Moisten the sponge with almond milk using a brush.
  4. Spread half of the ricotta mixture evenly over the sponge layer.
  5. Add another layer of sponge cake and moisten again with almond milk. Spread the remaining ricotta mixture on top.
  6. Finish with a final layer of sponge cake, pressing down gently to compact the layers.
  7. Cover the mold with the overhanging plastic wrap and refrigerate for at least 4 hours or overnight to set.
  8. Once set, gently remove the cassata from the mold using the plastic wrap and place it on a serving plate.
  9. Pour the melted dark chocolate over the top of the cassata, allowing it to drizzle down the sides.
  10. Sprinkle the sliced almonds on top for garnish. Cut into slices and serve chilled.
