Ingredients

  • Halal ground beef - 300 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Eggplant - 150 grams, diced
  • Onion - 1 small, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1, diced
  • Garlic - 2 cloves, minced
  • Canned diced tomatoes - 200 grams
  • Capers - 1 tablespoon
  • Green olives - 50 grams, chopped
  • Red wine vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Basil - 1 tablespoon, chopped

  • Fresh mozzarella cheese - 100 grams, sliced

Steps

  1. In a bowl, mix the ground beef with salt and black pepper, then form two patties.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat, and cook the patties for about 4-5 minutes on each side or until desired doneness. Remove and keep warm.
  3. In the same skillet, add another tablespoon of olive oil, then sauté the onion, celery, and red bell pepper for about 5 minutes until soft.
  4. Add the diced eggplant and minced garlic to the skillet, cooking for an additional 5 minutes until the eggplant is tender.
  5. Stir in the canned tomatoes, capers, olives, red wine vinegar, and sugar, and let the mixture simmer for 10 minutes, stirring occasionally. Add chopped basil just before removing from heat.
  6. Toast the burger buns lightly on a skillet or in a toaster.
  7. To assemble, place a beef patty on each bun, top with the caponata mixture, and add a slice of fresh mozzarella cheese.
