- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Eggplant - 150 grams, diced
- Onion - 1 small, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1, diced
- Garlic - 2 cloves, minced
- Canned diced tomatoes - 200 grams
- Capers - 1 tablespoon
- Green olives - 50 grams, chopped
- Red wine vinegar - 1 tablespoon
- Sugar - 1 teaspoon
- Basil - 1 tablespoon, chopped

- Fresh mozzarella cheese - 100 grams, sliced
Steps
- In a bowl, mix the ground beef with salt and black pepper, then form two patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat, and cook the patties for about 4-5 minutes on each side or until desired doneness. Remove and keep warm.
- In the same skillet, add another tablespoon of olive oil, then sauté the onion, celery, and red bell pepper for about 5 minutes until soft.
- Add the diced eggplant and minced garlic to the skillet, cooking for an additional 5 minutes until the eggplant is tender.
- Stir in the canned tomatoes, capers, olives, red wine vinegar, and sugar, and let the mixture simmer for 10 minutes, stirring occasionally. Add chopped basil just before removing from heat.
- Toast the burger buns lightly on a skillet or in a toaster.
- To assemble, place a beef patty on each bun, top with the caponata mixture, and add a slice of fresh mozzarella cheese.
