- White wine - 100 ml
- Fresh parsley - 2 tablespoons, chopped

Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the sliced red bell pepper and cook for another 3-4 minutes until softened.
- Add the halved cherry tomatoes and cook until they start to break down, about 5 minutes.
- Pour in the white wine and let it simmer for 2-3 minutes to reduce slightly.
- Season the sauce with salt and black pepper to taste.
- Gently place the mackerel fillets into the skillet, skin side down, and spoon some sauce over them.
- Cover the skillet and let it simmer for about 10-12 minutes, or until the mackerel is cooked through.
