  • Canned whole tomatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Yellow onion - 1 medium, chopped
  • Fresh basil leaves - 10 grams, chopped
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a medium-sized skillet over medium heat.
  2. Add the chopped onion and minced garlic to the skillet, sautéing until the onion becomes translucent, about 5 minutes.
  3. Pour in the canned whole tomatoes, breaking them up with a spoon, and bring the mixture to a simmer.
  4. Stir in the oregano, salt, and black pepper, and let the sauce simmer for about 10 minutes until it thickens slightly.
  5. While the sauce is simmering, season the mackerel fillets with salt and pepper.
  6. Gently place the mackerel fillets into the tomato sauce, cover, and cook for an additional 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Remove from heat, stir in the fresh basil and lemon juice, and adjust seasoning if necessary.
  8. Serve the mackerel hot, spooning the tomato sauce over the top.
