  • Fresh parsley, chopped - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the sliced black olives, halved cherry tomatoes, minced garlic, chopped parsley, olive oil, lemon juice, salt, and black pepper until well combined.
  3. Place the mackerel fillets skin-side down on a baking tray lined with parchment paper.
  4. Spread the olive and tomato mixture evenly over the mackerel fillets.
  5. Bake in the preheated oven for 15-20 minutes, or until the mackerel is cooked through and flakes easily with a fork.
