  • Mackerel fillets - 300 grams

  • Capers - 2 tablespoons, rinsed and drained
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a non-stick skillet over medium heat and add olive oil.
  2. Season the mackerel fillets with salt and black pepper on both sides.
  3. Place the mackerel fillets skin-side down in the skillet and cook for about 5 minutes until the skin is crispy.
  4. Flip the fillets gently and add the minced garlic, cherry tomatoes, and capers to the skillet.
  5. Cook for another 5-7 minutes, occasionally spooning the oil and juices over the fish and vegetables.
  6. Once the fish is cooked through and the tomatoes are soft, remove from heat and drizzle with lemon juice.
  7. Garnish with chopped parsley before serving.
