- Cherry tomatoes - 150 grams, halved

- Lemon - 1, juiced

- Black pepper - to taste
Steps
- Preheat a non-stick skillet over medium heat and add olive oil.
- Season the mackerel fillets with salt and black pepper on both sides.
- Place the mackerel fillets skin-side down in the skillet and cook for about 5 minutes until the skin is crispy.
- Flip the fillets gently and add the minced garlic, cherry tomatoes, and capers to the skillet.
- Cook for another 5-7 minutes, occasionally spooning the oil and juices over the fish and vegetables.
- Once the fish is cooked through and the tomatoes are soft, remove from heat and drizzle with lemon juice.
- Garnish with chopped parsley before serving.
