Ingredients

  • Mackerel fillets - 400 grams
  • Red wine - 200 milliliters
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cherry tomatoes - 150 grams, halved
  • Black olives - 50 grams, pitted and sliced
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, for serving

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Place the mackerel fillets in the skillet, skin-side down, and season with salt and black pepper. Cook for about 3-4 minutes until the skin is crispy.
  4. Carefully flip the fillets and add the red wine, cherry tomatoes, and black olives to the skillet.
  5. Bring the mixture to a gentle simmer and let it cook for another 8-10 minutes, allowing the flavors to meld and the fish to cook through.
  6. Once cooked, sprinkle with fresh parsley and serve with lemon wedges on the side.
