Steps

  3. Add the mackerel fillets to the skillet, skin side down, and cook for 3-4 minutes until the skin is crispy.
  4. Carefully flip the fillets and add the white wine, lemon juice, and lemon zest to the skillet.
  5. Add the halved cherry tomatoes, salt, and pepper, and let it simmer for about 10 minutes.
  6. Sprinkle the chopped parsley over the dish and cook for an additional 2 minutes.
