Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the mackerel fillets to the skillet, skin-side down, and cook for about 4 minutes until the skin is crispy.
  4. Gently flip the fillets and add the cherry tomatoes to the skillet.
