Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a baking dish, create a bed of sea salt, using about 250 grams to fully cover the bottom.
  3. Place the mackerel fillets on the salt bed, skin side down.
  4. Sprinkle the fresh rosemary over the fish, and then cover the mackerel with the remaining sea salt, ensuring it is completely sealed.
  5. Bake in the preheated oven for 25 minutes.
  6. Remove from the oven and let it rest for 10 minutes before carefully removing the salt crust.
  7. Serve the mackerel with a drizzle of olive oil and fresh lemon juice.
