  • Extra virgin olive oil - 60 ml
  • Garlic - 1 clove
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a food processor, combine the basil leaves, pine nuts, grated Parmesan cheese, garlic, salt, and pepper. Blend until finely chopped.
  3. With the processor running, slowly add the olive oil until the mixture is smooth and creamy. Adjust seasoning to taste.
  4. Place the mackerel fillets on a baking tray lined with parchment paper. Season with salt, pepper, and lemon juice.
  5. Spread a generous amount of pesto over each mackerel fillet.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
