Steps
- Preheat the oven to 200°C (400°F).
- In a food processor, combine the basil leaves, pine nuts, grated Parmesan cheese, garlic, salt, and pepper. Blend until finely chopped.
- With the processor running, slowly add the olive oil until the mixture is smooth and creamy. Adjust seasoning to taste.
- Place the mackerel fillets on a baking tray lined with parchment paper. Season with salt, pepper, and lemon juice.
