Ingredients

  • Zucchini - 300 grams, grated
  • Eggs - 3 large
  • Almond flour - 50 grams
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Fresh basil - 10 grams, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and add the minced garlic. Sauté until fragrant.
  3. Add the grated zucchini to the skillet and cook for about 5-7 minutes until softened. Remove from heat and let cool slightly.
  4. In a large mixing bowl, whisk together the eggs, remaining olive oil, nutritional yeast, almond flour, chopped basil, salt, and black pepper.
  5. Stir the cooked zucchini mixture into the egg mixture until well combined.
  6. Grease two small ramekins with olive oil and divide the zucchini mixture evenly between them.
  7. Place the ramekins in a baking dish and fill the dish with water until it reaches halfway up the sides of the ramekins.
  8. Bake in the preheated oven for 25-30 minutes, or until the tops are golden and a toothpick inserted comes out clean.
  9. Remove from the oven and let cool for a few minutes before serving.
