- Zucchini - 300 grams, grated
- Eggs - 3 large
- Almond flour - 50 grams
- Nutritional yeast - 2 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Fresh basil - 10 grams, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and add the minced garlic. Sauté until fragrant.
- Add the grated zucchini to the skillet and cook for about 5-7 minutes until softened. Remove from heat and let cool slightly.
- In a large mixing bowl, whisk together the eggs, remaining olive oil, nutritional yeast, almond flour, chopped basil, salt, and black pepper.
- Stir the cooked zucchini mixture into the egg mixture until well combined.
- Grease two small ramekins with olive oil and divide the zucchini mixture evenly between them.
- Place the ramekins in a baking dish and fill the dish with water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 25-30 minutes, or until the tops are golden and a toothpick inserted comes out clean.
- Remove from the oven and let cool for a few minutes before serving.
