  • Zucchini - 150 grams
  • Carrot - 100 grams
  • Bell Pepper - 100 grams
  • Spinach - 100 grams
  • Eggs - 2 large
  • Ricotta Cheese - 100 grams
  • Parmesan Cheese - 30 grams, grated
  • Olive Oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash and chop the zucchini, carrot, and bell pepper into small cubes.
  3. In a skillet, heat the olive oil over medium heat and sauté the chopped vegetables until they are tender, about 8-10 minutes. Add the spinach and cook until wilted.
  4. In a mixing bowl, whisk together the eggs, ricotta cheese, grated Parmesan, salt, pepper, and nutmeg until well combined.
  5. Add the sautéed vegetables to the egg mixture and stir until evenly mixed.
  6. Grease two individual ramekins or a small baking dish with olive oil.
