- Black Pepper - 1/4 teaspoon
- Nutmeg - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- Wash and chop the zucchini, carrot, and bell pepper into small cubes.
- In a skillet, heat the olive oil over medium heat and sauté the chopped vegetables until they are tender, about 8-10 minutes. Add the spinach and cook until wilted.
- In a mixing bowl, whisk together the eggs, ricotta cheese, grated Parmesan, salt, pepper, and nutmeg until well combined.
