Ingredients

  • Fresh spinach - 300 grams
  • Ricotta cheese - 150 grams
  • Grated Parmesan cheese - 50 grams
  • Eggs - 2 large
  • Milk - 100 ml
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch
  • Breadcrumbs - for dusting the baking dish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-5 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, eggs, milk, salt, pepper, and nutmeg. Whisk until smooth.
  5. Chop the cooled spinach and fold it into the cheese mixture until well combined.
  6. Grease two individual ramekins or one small baking dish with olive oil and dust with breadcrumbs to prevent sticking.
  7. Pour the spinach and cheese mixture into the prepared ramekins or baking dish, smoothing the top with a spatula.
  8. Place the ramekins or baking dish in a larger baking tray filled with hot water to create a water bath and bake in the preheated oven for 25-30 minutes, or until set and lightly golden on top.
  9. Remove from the oven and let cool for a few minutes before serving. Carefully run a knife around the edges and invert onto a plate if desired.
