- Milk - 100 ml
- Olive oil - 2 tablespoons

- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
- Breadcrumbs - for dusting the baking dish
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 3-5 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, eggs, milk, salt, pepper, and nutmeg. Whisk until smooth.
- Chop the cooled spinach and fold it into the cheese mixture until well combined.
- Grease two individual ramekins or one small baking dish with olive oil and dust with breadcrumbs to prevent sticking.
- Pour the spinach and cheese mixture into the prepared ramekins or baking dish, smoothing the top with a spatula.
- Place the ramekins or baking dish in a larger baking tray filled with hot water to create a water bath and bake in the preheated oven for 25-30 minutes, or until set and lightly golden on top.
- Remove from the oven and let cool for a few minutes before serving. Carefully run a knife around the edges and invert onto a plate if desired.
