- Erythritol - 40 grams

- Lemon zest - 1 teaspoon
- Almond flour - 15 grams
- Salt - a pinch

Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the ricotta cheese, eggs, erythritol, vanilla extract, lemon zest, almond flour, and salt. Mix until smooth and well combined.
- Grease two small ramekins with butter.
- Divide the ricotta mixture evenly between the prepared ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 25-30 minutes, or until the tops are set and slightly golden.
- Remove from the oven and let cool slightly before serving.
