Ingredients

  • Ricotta cheese - 250 grams
  • Eggs - 2 large
  • Erythritol - 40 grams
  • Vanilla extract - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Almond flour - 15 grams
  • Salt - a pinch
  • Butter (for greasing) - 10 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the ricotta cheese, eggs, erythritol, vanilla extract, lemon zest, almond flour, and salt. Mix until smooth and well combined.
  3. Grease two small ramekins with butter.
  4. Divide the ricotta mixture evenly between the prepared ramekins.
  5. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  6. Bake in the preheated oven for 25-30 minutes, or until the tops are set and slightly golden.
  7. Remove from the oven and let cool slightly before serving.
