- Black pepper - 1/2 teaspoon
- Breadcrumbs - 30 grams
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- Peel and chop the potatoes into small cubes, then boil them in salted water for about 15-20 minutes or until tender.
- Drain the potatoes and mash them in a bowl until smooth.
- In a separate bowl, blend the silken tofu until creamy, then mix in the nutritional yeast, olive oil, garlic powder, dried basil, salt, and black pepper.
- Combine the mashed potatoes and tofu mixture until well incorporated.
- Grease a small baking dish or individual ramekins with olive oil and sprinkle the bottom with breadcrumbs.
- Pour the potato and tofu mixture into the prepared dish, smoothing the top with a spatula.
- Sprinkle additional breadcrumbs on top for a crispy finish.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and slightly firm.
