  • Silken tofu - 150 grams
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Breadcrumbs - 30 grams
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Peel and chop the potatoes into small cubes, then boil them in salted water for about 15-20 minutes or until tender.
  3. Drain the potatoes and mash them in a bowl until smooth.
  4. In a separate bowl, blend the silken tofu until creamy, then mix in the nutritional yeast, olive oil, garlic powder, dried basil, salt, and black pepper.
  5. Combine the mashed potatoes and tofu mixture until well incorporated.
  6. Grease a small baking dish or individual ramekins with olive oil and sprinkle the bottom with breadcrumbs.
  7. Pour the potato and tofu mixture into the prepared dish, smoothing the top with a spatula.
  8. Sprinkle additional breadcrumbs on top for a crispy finish.
  9. Bake in the preheated oven for 30-35 minutes, or until the top is golden and slightly firm.
  10. Let it cool for a few minutes before slicing and serving, garnished with fresh parsley.
