Ingredients

  • Carrots - 300 grams, peeled and chopped
  • Eggs - 2 large
  • Grated Parmesan cheese - 30 grams
  • Ricotta cheese - 100 grams
  • Olive oil - 1 tablespoon
  • Milk - 50 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch
  • Fresh parsley - 1 tablespoon, chopped for garnish

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small baking dish with olive oil.
  2. In a pot, boil the chopped carrots in salted water for about 15 minutes, or until tender. Drain and set aside to cool slightly.
  3. In a mixing bowl, combine the boiled carrots, eggs, grated Parmesan, ricotta cheese, milk, salt, pepper, and nutmeg. Blend until smooth using a hand blender or food processor.
  4. Pour the carrot mixture into the prepared baking dish and smooth the top with a spatula.
  5. Bake in the preheated oven for 25-30 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  6. Remove from the oven and let it cool for a few minutes before slicing. Garnish with chopped parsley and serve warm.
