Ingredients

  • Artichokes - 300 grams
  • Eggs - 2 large
  • Parmesan cheese - 50 grams, grated
  • Heavy cream - 100 ml
  • Butter - 30 grams, plus extra for greasing
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Clean the artichokes by removing the tough outer leaves and cutting off the tops. Slice them in half and remove the choke if present. Place the cleaned artichokes in a bowl of water with lemon juice to prevent browning.
  3. In a pan, melt the butter over medium heat. Add the chopped onion and cook until translucent. Add the minced garlic and cook for another minute.
  4. Drain the artichokes and add them to the pan. Cook for about 5-7 minutes, stirring occasionally, until they are tender. Remove from heat and let cool slightly.
  5. In a mixing bowl, whisk together the eggs, heavy cream, grated Parmesan cheese, salt, and black pepper until well combined.
  6. Add the cooked artichoke mixture to the egg mixture and stir in the chopped parsley.
  7. Grease two ramekins with butter and divide the mixture evenly between them.
  8. Place the ramekins in a baking dish and fill the dish with boiling water halfway up the sides of the ramekins to create a water bath.
  9. Bake in the preheated oven for 30-35 minutes, or until the sformato is set and a toothpick inserted in the center comes out clean.
  10. Remove from the oven and let cool for a few minutes before serving. Run a knife around the edges and invert onto plates.
