- Artichokes - 300 grams
- Eggs - 2 large
- Parmesan cheese - 50 grams, grated
- Heavy cream - 100 ml
- Butter - 30 grams, plus extra for greasing
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 1 tablespoon, chopped
Steps
- Preheat the oven to 180°C (350°F).
- Clean the artichokes by removing the tough outer leaves and cutting off the tops. Slice them in half and remove the choke if present. Place the cleaned artichokes in a bowl of water with lemon juice to prevent browning.
- In a pan, melt the butter over medium heat. Add the chopped onion and cook until translucent. Add the minced garlic and cook for another minute.
- Drain the artichokes and add them to the pan. Cook for about 5-7 minutes, stirring occasionally, until they are tender. Remove from heat and let cool slightly.
- In a mixing bowl, whisk together the eggs, heavy cream, grated Parmesan cheese, salt, and black pepper until well combined.
- Add the cooked artichoke mixture to the egg mixture and stir in the chopped parsley.
- Grease two ramekins with butter and divide the mixture evenly between them.
- Place the ramekins in a baking dish and fill the dish with boiling water halfway up the sides of the ramekins to create a water bath.
- Bake in the preheated oven for 30-35 minutes, or until the sformato is set and a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool for a few minutes before serving. Run a knife around the edges and invert onto plates.
