Ingredients

  • Zucchini - 100 grams
  • Carrot - 100 grams
  • Red bell pepper - 50 grams
  • Onion - 50 grams
  • Eggs - 2 large
  • Ricotta cheese - 100 grams
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a few leaves, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash and dice the zucchini, carrot, and red bell pepper into small pieces.
  3. Finely chop the onion.
  4. In a skillet, heat olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
  5. Add the diced zucchini, carrot, and red bell pepper to the skillet. Sauté for another 10 minutes until the vegetables are tender. Season with salt and black pepper.
  6. In a mixing bowl, whisk together the eggs, ricotta cheese, Parmesan cheese, and chopped basil until smooth.
  7. Fold the sautéed vegetables into the egg and cheese mixture until well combined.
  8. Grease two ramekins with olive oil and pour the mixture evenly into them.
  9. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins to create a water bath.
  10. Bake in the preheated oven for 25-30 minutes or until the sformatini are set and lightly golden on top.
  11. Remove from the oven and let cool for a few minutes before carefully inverting onto plates.
  12. Serve warm or at room temperature, garnished with additional basil if desired.
