- Artichokes - 200 grams
- Eggs - 2 large
- Coconut cream - 100 ml
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- Preheat the oven to 180°C (350°F) and prepare a baking dish with a bit of olive oil.
- Trim the artichokes, removing the tough outer leaves and cutting off the tops. Slice them in half and remove the choke.
- In a pot, bring water to a boil and add the prepared artichokes. Cook for about 10-12 minutes, until tender. Drain and let cool.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the cooked artichokes to the skillet and mash them gently with a fork until slightly chunky.
- In a mixing bowl, whisk together the eggs, coconut cream, lemon juice, salt, and black pepper until well combined.
- Fold the mashed artichokes into the egg mixture and mix in the chopped parsley.
- Pour the mixture into the prepared baking dish and smooth the top.
- Bake for 25-30 minutes until the top is set and lightly golden.
- Remove from the oven and let cool slightly before slicing and serving.
