Ingredients

  • Artichokes - 200 grams
  • Eggs - 2 large
  • Coconut cream - 100 ml
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Preheat the oven to 180°C (350°F) and prepare a baking dish with a bit of olive oil.
  2. Trim the artichokes, removing the tough outer leaves and cutting off the tops. Slice them in half and remove the choke.
  3. In a pot, bring water to a boil and add the prepared artichokes. Cook for about 10-12 minutes, until tender. Drain and let cool.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  5. Add the cooked artichokes to the skillet and mash them gently with a fork until slightly chunky.
  6. In a mixing bowl, whisk together the eggs, coconut cream, lemon juice, salt, and black pepper until well combined.
  7. Fold the mashed artichokes into the egg mixture and mix in the chopped parsley.
  8. Pour the mixture into the prepared baking dish and smooth the top.
  9. Bake for 25-30 minutes until the top is set and lightly golden.
  10. Remove from the oven and let cool slightly before slicing and serving.
