Ingredients

  • All-purpose flour - 150 grams
  • Salt - 1/4 teaspoon
  • Cold water - 60 milliliters
  • Unsalted margarine - 100 grams
  • Semolina - 50 grams
  • Ricotta cheese - 100 grams
  • Sugar - 50 grams
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Egg - 1 large (for egg wash)

Steps

  1. In a large bowl, mix the flour and salt. Gradually add cold water until a dough forms. Knead for 5-7 minutes until smooth.
  2. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. In a saucepan, bring 200 ml of water to a boil. Add the semolina, stirring constantly for 2-3 minutes until thickened. Remove from heat and let cool.
  4. In a mixing bowl, combine the cooled semolina, ricotta, sugar, vanilla extract, and cinnamon until smooth.
  5. Remove the dough from the refrigerator and roll it out into a thin rectangle. Spread half of the margarine evenly over the surface.
  6. Fold the dough into thirds like a letter, then roll it out again into a thin rectangle. Repeat the process of spreading margarine and folding twice more.
  7. Roll the dough out one last time and cut it into circles (about 10 cm in diameter).
  8. Place a spoonful of the filling in the center of each circle and fold the edges over to form a shell, pinching to seal.
  9. Preheat the oven to 180°C (350°F). Place the sfogliatelle on a baking sheet lined with parchment paper.
  10. Beat the egg and brush the tops of the pastries with the egg wash.
  11. Bake for 25-30 minutes until golden brown and flaky. Allow to cool slightly before serving.
