Sfogliatella is a delightful Italian pastry with a flaky, layered crust and a sweet, creamy filling made from semolina and ricotta. This kosher version maintains the traditional essence while adhering to dietary laws.

Ingredients
- All-purpose flour - 150 grams
- Salt - 1/4 teaspoon
- Cold water - 60 milliliters
- Unsalted margarine - 100 grams
- Semolina - 50 grams
- Ricotta cheese - 100 grams
- Sugar - 50 grams
- Vanilla extract - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Egg - 1 large (for egg wash)
Steps
- In a large bowl, mix the flour and salt. Gradually add cold water until a dough forms. Knead for 5-7 minutes until smooth.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- In a saucepan, bring 200 ml of water to a boil. Add the semolina, stirring constantly for 2-3 minutes until thickened. Remove from heat and let cool.
- In a mixing bowl, combine the cooled semolina, ricotta, sugar, vanilla extract, and cinnamon until smooth.
- Remove the dough from the refrigerator and roll it out into a thin rectangle. Spread half of the margarine evenly over the surface.
- Fold the dough into thirds like a letter, then roll it out again into a thin rectangle. Repeat the process of spreading margarine and folding twice more.
- Roll the dough out one last time and cut it into circles (about 10 cm in diameter).
- Place a spoonful of the filling in the center of each circle and fold the edges over to form a shell, pinching to seal.
- Preheat the oven to 180°C (350°F). Place the sfogliatelle on a baking sheet lined with parchment paper.
- Beat the egg and brush the tops of the pastries with the egg wash.
- Bake for 25-30 minutes until golden brown and flaky. Allow to cool slightly before serving.
