- Almond milk - 250 ml
- All-purpose flour - 50 grams
- Cornstarch - 30 grams
- Sugar - 50 grams
- Lemon zest - 1 teaspoon
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Oil for frying - as needed
- Powdered sugar - for dusting
Steps
- Rinse the Arborio rice under cold water until the water runs clear, then combine it with almond milk in a saucepan and bring to a boil.
- Reduce heat to low and simmer for about 15 minutes, stirring occasionally, until the rice is fully cooked and creamy. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the all-purpose flour, cornstarch, sugar, lemon zest, baking powder, and salt.
- Add the cooked rice and mix until well incorporated. Stir in the vanilla extract to form a thick batter.
- Heat oil in a deep frying pan over medium heat. Once hot, drop spoonfuls of the batter into the oil, frying until golden brown on all sides, about 3-4 minutes.
- Remove the fritters with a slotted spoon and drain on paper towels. Dust with powdered sugar before serving.
