  • Arborio rice - 100 grams
  • Almond milk - 250 ml
  • All-purpose flour - 50 grams
  • Cornstarch - 30 grams
  • Sugar - 50 grams
  • Lemon zest - 1 teaspoon
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Oil for frying - as needed
  • Powdered sugar - for dusting

Steps

  1. Rinse the Arborio rice under cold water until the water runs clear, then combine it with almond milk in a saucepan and bring to a boil.
  2. Reduce heat to low and simmer for about 15 minutes, stirring occasionally, until the rice is fully cooked and creamy. Remove from heat and let it cool slightly.
  3. In a mixing bowl, combine the all-purpose flour, cornstarch, sugar, lemon zest, baking powder, and salt.
  4. Add the cooked rice and mix until well incorporated. Stir in the vanilla extract to form a thick batter.
  5. Heat oil in a deep frying pan over medium heat. Once hot, drop spoonfuls of the batter into the oil, frying until golden brown on all sides, about 3-4 minutes.
  6. Remove the fritters with a slotted spoon and drain on paper towels. Dust with powdered sugar before serving.
