Steps
- In a mixing bowl, whisk the eggs with erythritol until the mixture is pale and fluffy, about 5 minutes.
- Add the cocoa powder, vanilla extract, and a pinch of salt to the egg mixture, and continue to whisk until fully combined.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the cocoa-egg mixture until no white streaks remain, being careful not to deflate the cream.
- Transfer the mixture into a loaf pan lined with parchment paper, smoothing the top with a spatula.
- Cover with plastic wrap and freeze for at least 4 hours or until firm.
