  • Vanilla extract - 1 tsp
  • Salt - a pinch

Steps

  1. In a mixing bowl, whisk the eggs with erythritol until the mixture is pale and fluffy, about 5 minutes.
  2. Add the cocoa powder, vanilla extract, and a pinch of salt to the egg mixture, and continue to whisk until fully combined.
  3. In a separate bowl, whip the heavy cream until soft peaks form.
  4. Gently fold the whipped cream into the cocoa-egg mixture until no white streaks remain, being careful not to deflate the cream.
  5. Transfer the mixture into a loaf pan lined with parchment paper, smoothing the top with a spatula.
  6. Cover with plastic wrap and freeze for at least 4 hours or until firm.
  7. To serve, remove the semifreddo from the pan, slice, and enjoy.
