  • Cherry tomatoes - 200 grams, halved
  • Shrimp - 150 grams, peeled and deveined
  • Scallops - 150 grams, cleaned
  • White wine - 50 ml
  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Spiralize the zucchini using a spiralizer and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften.
  5. Add the shrimp and scallops to the skillet, cooking for about 3-4 minutes until the shrimp are pink and the scallops are opaque.
  6. Pour in the white wine and cook for an additional 2 minutes to reduce slightly.
  7. Season the seafood mixture with salt and black pepper to taste.
  8. Add the spiralized zucchini to the skillet, tossing gently to combine and heat through for about 2-3 minutes.
  9. Remove from heat and stir in the chopped fresh basil.
