- Zucchini - 2 medium (about 400g)
- Olive oil - 2 tablespoons (30ml)
- Garlic - 3 cloves, minced
- Cherry tomatoes - 200g, halved
- Canned crushed tomatoes - 400g
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Shrimp - 200g, peeled and deveined
- Calamari - 100g, sliced into rings
- Fresh parsley - 2 tablespoons, chopped for garnish
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create zoodles. Set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Stir in the crushed tomatoes, oregano, basil, salt, and pepper. Allow the sauce to simmer for about 10 minutes, stirring occasionally.
- While the sauce is simmering, add the shrimp and calamari to the sauce, cooking for an additional 5-7 minutes until the seafood is cooked through.
- In a separate pot, bring water to a boil and lightly blanch the zoodles for 1-2 minutes until just tender. Drain and set aside.
- To serve, place a portion of zoodles on each plate, top with the seafood marinara, and garnish with fresh parsley and red pepper flakes if desired.
