Ingredients

  • Zucchini - 2 medium (about 400g)
  • Olive oil - 2 tablespoons (30ml)
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200g, halved
  • Canned crushed tomatoes - 400g
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Shrimp - 200g, peeled and deveined
  • Calamari - 100g, sliced into rings
  • Fresh parsley - 2 tablespoons, chopped for garnish
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create zoodles. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  4. Stir in the crushed tomatoes, oregano, basil, salt, and pepper. Allow the sauce to simmer for about 10 minutes, stirring occasionally.
  5. While the sauce is simmering, add the shrimp and calamari to the sauce, cooking for an additional 5-7 minutes until the seafood is cooked through.
  6. In a separate pot, bring water to a boil and lightly blanch the zoodles for 1-2 minutes until just tender. Drain and set aside.
  7. To serve, place a portion of zoodles on each plate, top with the seafood marinara, and garnish with fresh parsley and red pepper flakes if desired.
