Ingredients

  • Ground chicken - 400 grams
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fennel seeds - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Crushed red pepper flakes - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Natural hog casings - 2 meters (optional, for casing)

Steps

  1. In a mixing bowl, combine ground chicken, minced garlic, chopped parsley, fennel seeds, paprika, black pepper, salt, and crushed red pepper flakes. Mix thoroughly until all ingredients are well incorporated.
  2. If using casings, rinse them under cold water and soak in warm water for about 30 minutes. Rinse again before using.
  3. Using a sausage stuffer or a piping bag, fill the casings with the chicken mixture, being careful not to overstuff. Twist sausages at desired lengths and tie off the ends. If not using casings, form the mixture into patties.
  4. Heat olive oil in a grill pan or on a barbecue over medium heat. Cook the sausages for about 10-12 minutes, turning occasionally until fully cooked and browned on the outside.
  5. Serve the Salsiccia di Pollo hot with your choice of sides, such as grilled vegetables or a fresh salad.
