Ingredients

  • Pork sausage (preferably organic and grass-fed) - 300g
  • Fresh rosemary - 1 sprig
  • Fresh sage - 3 leaves
  • Garlic - 2 cloves
  • Sea salt - 1 tsp
  • Black pepper - 1/2 tsp
  • Olive oil - 1 tbsp
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1, sliced

Steps

  1. In a bowl, combine the minced garlic, chopped rosemary, chopped sage, sea salt, and black pepper with the pork sausage. Mix well and form into two sausage links.
  2. Preheat the grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking.
  3. Place the sausages on the grill and cook for about 12-15 minutes, turning occasionally until they are browned and cooked through.
  4. While the sausages are grilling, toss the sliced zucchini, red bell pepper, and cherry tomatoes in a bowl with a drizzle of olive oil, salt, and pepper.
  5. Add the vegetables to the grill for the last 8-10 minutes of cooking, turning until they are tender and charred.
  6. Once cooked, remove the sausages and vegetables from the grill and let them rest for a couple of minutes before serving. Enjoy your Salsiccia alla Griglia!
