  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh basil - a handful, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the sliced bell pepper, zucchini, red onion, cherry tomatoes, and minced garlic.
  3. Drizzle the vegetables with olive oil, and season with dried oregano, salt, and black pepper. Toss until well coated.
  4. Spread the vegetable mixture evenly in a baking dish.
  5. Place the Italian sausages on top of the vegetables.
  6. Bake in the preheated oven for 30-35 minutes, or until the sausages are cooked through and the vegetables are tender, stirring halfway through.
  7. Once cooked, remove from the oven and let it rest for a few minutes.
