Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the sliced bell pepper, zucchini, red onion, cherry tomatoes, and minced garlic.
- Drizzle the vegetables with olive oil, and season with dried oregano, salt, and black pepper. Toss until well coated.
- Spread the vegetable mixture evenly in a baking dish.
- Place the Italian sausages on top of the vegetables.
- Bake in the preheated oven for 30-35 minutes, or until the sausages are cooked through and the vegetables are tender, stirring halfway through.
- Once cooked, remove from the oven and let it rest for a few minutes.
