- Egg - 1 large
- Breadcrumbs - 30 grams

Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water and set aside.
- In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent.
- Add the Arborio rice to the saucepan and stir for 2-3 minutes until the rice is slightly toasted.
- Gradually add the chicken broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more. Continue until the rice is creamy and al dente, about 18-20 minutes.
- Stir in the saffron mixture, Parmesan cheese, salt, and pepper. Remove from heat and let it cool slightly.
- Once cooled, mix in the egg and breadcrumbs, forming the mixture into two equal patties.
- In a skillet, heat the remaining olive oil over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown.
