Ingredients

  • Arborio rice - 150 grams
  • Saffron threads - 0.1 grams
  • Chicken broth - 500 ml
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Breadcrumbs - 30 grams
  • Salt - to taste
  • Black pepper - to taste
  • Burger buns - 2
  • Fresh arugula - 50 grams
  • Mayonnaise - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water and set aside.
  2. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent.
  3. Add the Arborio rice to the saucepan and stir for 2-3 minutes until the rice is slightly toasted.
  4. Gradually add the chicken broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more. Continue until the rice is creamy and al dente, about 18-20 minutes.
  5. Stir in the saffron mixture, Parmesan cheese, salt, and pepper. Remove from heat and let it cool slightly.
  6. Once cooled, mix in the egg and breadcrumbs, forming the mixture into two equal patties.
  7. In a skillet, heat the remaining olive oil over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown.
  8. Meanwhile, in a small bowl, mix mayonnaise with lemon juice to create a zesty sauce.
