Ingredients

  • Cauliflower - 1 medium head
  • Olive oil - 4 tablespoons
  • Garlic - 3 cloves, minced
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Remove the outer leaves from the cauliflower and trim the bottom to create a flat surface.
  3. Slice the cauliflower into 1.5 cm thick steaks; you should get about 2-3 steaks depending on the size of the head.
  4. In a small bowl, mix together the olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper.
  5. Brush both sides of the cauliflower steaks with the olive oil mixture.
  6. Place the cauliflower steaks on a baking sheet lined with parchment paper.
  7. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and tender.
  8. While the cauliflower is roasting, mix the grated Parmesan, chopped parsley, and lemon juice in a small bowl.
  9. Once the cauliflower is done, remove it from the oven and sprinkle the Parmesan mixture on top.
  10. Serve the roasted cauliflower steaks warm, garnished with additional parsley if desired.
