Ingredients

  • Cauliflower - 300 grams, cut into small florets
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Canned diced tomatoes - 200 grams
  • Green olives - 50 grams, pitted and chopped
  • Capers - 1 tablespoon, rinsed
  • Balsamic vinegar - 1 tablespoon
  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, salt, and black pepper. Spread them evenly on a baking sheet.
  3. Roast the cauliflower in the preheated oven for 20 minutes, or until golden brown and tender, stirring halfway through.
  4. While the cauliflower is roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat.
  5. Add the diced red onion and red bell pepper to the skillet, sautéing for about 5 minutes until softened.
  6. Add the minced garlic and diced zucchini to the skillet, cooking for an additional 3 minutes.
  7. Stir in the canned diced tomatoes, chopped green olives, capers, and balsamic vinegar. Simmer for 5 minutes, allowing the flavors to meld.
  8. Once the cauliflower is done roasting, add it to the skillet and stir well to combine. Cook for another 2 minutes to warm through.
  9. Remove from heat, stir in the chopped fresh basil, and adjust seasoning with salt and pepper as needed.
  10. Serve warm, garnished with additional basil if desired.
