- Arborio rice - 160 grams
- Fish stock - 500 ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallot - 1, finely chopped
- Cherry tomatoes - 100 grams, halved
- White wine - 100 ml
- Prawns - 100 grams, peeled and deveined
- Calamari - 100 grams, sliced
- Mussels - 100 grams, cleaned
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the fish stock and keep it warm over low heat.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped shallot, sautéing until translucent.
- Add the arborio rice to the skillet, stirring for 2-3 minutes until the rice is well-coated and slightly toasted.
- Pour in the white wine and stir until it is mostly absorbed by the rice.
- Begin adding the warm fish stock, one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next.
- After about 10 minutes of cooking, add the cherry tomatoes and continue stirring.
- When the rice is almost al dente (about 15 minutes in total), add the prawns, calamari, and mussels. Stir well and cook until the seafood is cooked through and the mussels have opened.
- Remove from heat, stir in lemon juice and chopped parsley, and season with salt and black pepper to taste.
- Let the risotto sit for a couple of minutes before serving, allowing the flavors to meld.
