Ingredients

  • Arborio rice - 150 grams
  • Mixed seafood (shrimp, mussels, calamari) - 200 grams
  • Fish stock - 500 ml
  • White wine - 100 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallot - 1, finely chopped
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the fish stock over low heat and keep it warm.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until translucent.
  3. Add the Arborio rice to the skillet, stirring for about 2 minutes until the rice is lightly toasted.
  4. Pour in the white wine and stir until it's mostly absorbed by the rice.
  5. Begin adding the warm fish stock, one ladle at a time, stirring continuously. Wait until the liquid is absorbed before adding more.
  6. After about 10 minutes, add the mixed seafood and halved cherry tomatoes to the risotto, continuing to add stock as needed.
  7. Cook for another 5-8 minutes until the seafood is cooked through and the rice is al dente.
  8. Stir in the chopped parsley, lemon juice, and season with salt and black pepper to taste.
  9. Remove from heat and let it rest for a minute before serving.
