Ingredients

  • Arborio rice - 150 grams
  • Artichokes (fresh or frozen) - 200 grams, cleaned and sliced
  • Vegetable broth - 750 ml
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)

Steps

  1. In a saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sliced artichokes to the skillet. Sauté for another 5 minutes until the artichokes are tender.
  4. Stir in the Arborio rice, coating it with the oil and vegetables, and cook for 2 minutes until the rice is slightly translucent.
  5. Begin adding the warm vegetable broth, one ladle at a time, to the rice mixture. Stir frequently and allow the rice to absorb the broth before adding more. Repeat this process for about 18-20 minutes, or until the rice is creamy and al dente.
  6. Once the rice is cooked, remove the skillet from heat. Stir in the lemon juice, chopped parsley, nutritional yeast (if using), and season with salt and black pepper to taste.
  7. Let the risotto rest for 2 minutes before serving. Garnish with additional parsley if desired and enjoy!
