- Arborio rice - 150 grams
- Artichokes (fresh or frozen) - 200 grams, cleaned and sliced
- Vegetable broth - 750 ml
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)
Steps
- In a saucepan, heat the vegetable broth over low heat and keep it warm.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sliced artichokes to the skillet. Sauté for another 5 minutes until the artichokes are tender.
- Stir in the Arborio rice, coating it with the oil and vegetables, and cook for 2 minutes until the rice is slightly translucent.
- Begin adding the warm vegetable broth, one ladle at a time, to the rice mixture. Stir frequently and allow the rice to absorb the broth before adding more. Repeat this process for about 18-20 minutes, or until the rice is creamy and al dente.
- Once the rice is cooked, remove the skillet from heat. Stir in the lemon juice, chopped parsley, nutritional yeast (if using), and season with salt and black pepper to taste.
- Let the risotto rest for 2 minutes before serving. Garnish with additional parsley if desired and enjoy!
