Steps
- In a small saucepan, bring the vegetable broth to a gentle simmer and add the saffron strands to infuse.
- In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and sauté until translucent, about 2-3 minutes.

- Continue this process for about 18-20 minutes, or until the rice is al dente and creamy.
- Once the risotto is cooked, season with salt and black pepper to taste. Remove from heat and let it sit for a minute.
- Serve hot, garnished with fresh parsley.
