- Fresh parsley, chopped - 2 tablespoons

Steps
- In a medium saucepan, heat the chicken or vegetable broth over low heat to keep it warm.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the Italian sausage to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the Arborio rice, ensuring each grain is coated with the oil and mixed with the sausage and onion. Cook for 1-2 minutes until the rice is slightly translucent.
- Pour in the white wine and let it simmer until evaporated, stirring frequently.
- Begin adding the warm broth, one ladle at a time, stirring constantly. Allow the rice to absorb the liquid before adding the next ladle. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
- Once the rice is cooked, remove the skillet from heat. Stir in the butter and grated Parmesan cheese until melted and creamy. Season with salt and black pepper to taste.
