- Parmesan cheese - 50 grams, grated
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat the vegetable broth over low heat to keep it warm.
- In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and chopped radicchio to the skillet. Cook for another 3-4 minutes until the radicchio has wilted.
- Stir in the cauliflower rice and mix well with the onion and radicchio. Cook for 2-3 minutes to allow the flavors to meld.
- Gradually add the warm vegetable broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more. Continue this process until the cauliflower rice is tender and creamy, about 15-20 minutes.
- Once the risotto is cooked, remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
- Serve immediately, garnished with fresh parsley.
