  • Parmesan cheese - 50 grams, grated
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat the vegetable broth over low heat to keep it warm.
  2. In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and chopped radicchio to the skillet. Cook for another 3-4 minutes until the radicchio has wilted.
  4. Stir in the cauliflower rice and mix well with the onion and radicchio. Cook for 2-3 minutes to allow the flavors to meld.
  5. Gradually add the warm vegetable broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more. Continue this process until the cauliflower rice is tender and creamy, about 15-20 minutes.
  6. Once the risotto is cooked, remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  7. Serve immediately, garnished with fresh parsley.
