  • Arborio rice - 150 grams
  • Fresh green peas - 100 grams
  • Low-sodium vegetable broth - 500 ml
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. In a saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a large skillet, heat olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the Arborio rice and cook for 2-3 minutes until the rice is lightly toasted.
  5. Pour in a ladle of warm vegetable broth and stir gently. Allow the rice to absorb the broth, then add another ladle when it starts to dry out.
  6. Continue adding broth, stirring frequently, for about 15 minutes until the rice is creamy and al dente.
  7. Add the fresh peas and parmesan cheese, stirring to combine. Season with salt and black pepper to taste.
  8. Cook for an additional 2-3 minutes until the peas are tender.
  9. Remove from heat and let it rest for a minute. Garnish with chopped parsley before serving.
