- Garlic - 2 cloves, minced
- Parmesan cheese - 30 grams, grated
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 1 tablespoon, chopped
Steps
- In a saucepan, heat the vegetable broth over low heat and keep it warm.
- In a large skillet, heat olive oil and butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the Arborio rice and cook for 2-3 minutes until the rice is lightly toasted.
- Pour in a ladle of warm vegetable broth and stir gently. Allow the rice to absorb the broth, then add another ladle when it starts to dry out.
- Continue adding broth, stirring frequently, for about 15 minutes until the rice is creamy and al dente.
- Add the fresh peas and parmesan cheese, stirring to combine. Season with salt and black pepper to taste.
- Cook for an additional 2-3 minutes until the peas are tender.
- Remove from heat and let it rest for a minute. Garnish with chopped parsley before serving.
