- Arborio rice - 150 grams
- Shrimp (peeled and deveined) - 200 grams
- Vegetable or chicken broth - 500 ml
- White wine - 100 ml
- Olive oil - 2 tablespoons
- Shallot (finely chopped) - 1 medium
- Garlic (minced) - 1 clove
- Lemon juice - 1 tablespoon
- Fresh parsley (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (grated) - 30 grams
Steps
- In a saucepan, heat the vegetable or chicken broth over low heat and keep it warm.
- In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, and sauté until softened, about 3-4 minutes.
- Add the Arborio rice to the skillet and toast for 1-2 minutes, stirring frequently until the rice is slightly translucent.
- Pour in the white wine and stir until it is mostly absorbed by the rice.
- Begin adding the warm broth, one ladle at a time, stirring continuously and allowing the liquid to be absorbed before adding more. This process should take about 18-20 minutes.
- When the rice is creamy and al dente, stir in the shrimp, lemon juice, and chopped parsley. Cook for an additional 3-4 minutes until the shrimp are pink and cooked through.
- Season with salt and black pepper to taste. Remove from heat and stir in the grated Parmesan cheese until melted and combined.
- Serve immediately, garnished with extra parsley and a sprinkle of Parmesan if desired.
