Ingredients

  • Arborio rice - 150 grams
  • Shrimp (peeled and deveined) - 200 grams
  • Vegetable or chicken broth - 500 ml
  • White wine - 100 ml
  • Olive oil - 2 tablespoons
  • Shallot (finely chopped) - 1 medium
  • Garlic (minced) - 1 clove
  • Lemon juice - 1 tablespoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (grated) - 30 grams

Steps

  1. In a saucepan, heat the vegetable or chicken broth over low heat and keep it warm.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, and sauté until softened, about 3-4 minutes.
  3. Add the Arborio rice to the skillet and toast for 1-2 minutes, stirring frequently until the rice is slightly translucent.
  4. Pour in the white wine and stir until it is mostly absorbed by the rice.
  5. Begin adding the warm broth, one ladle at a time, stirring continuously and allowing the liquid to be absorbed before adding more. This process should take about 18-20 minutes.
  6. When the rice is creamy and al dente, stir in the shrimp, lemon juice, and chopped parsley. Cook for an additional 3-4 minutes until the shrimp are pink and cooked through.
  7. Season with salt and black pepper to taste. Remove from heat and stir in the grated Parmesan cheese until melted and combined.
  8. Serve immediately, garnished with extra parsley and a sprinkle of Parmesan if desired.
