  • Zucchini flowers - 100 grams, cleaned and chopped
  • Vegetable broth - 500 ml, heated
  • Olive oil - 2 tablespoons
  • Shallot - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • White wine - 50 ml (optional)
  • Fresh basil - 5 grams, chopped
  • Fresh parsley - 5 grams, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the vegetable broth and keep it warm over low heat.
  2. In a large pan, heat the olive oil over medium heat, then add the chopped shallot and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  4. Stir in the Arborio rice and toast for about 2 minutes, stirring frequently until the rice becomes slightly translucent.
  5. Pour in the white wine (if using) and let it simmer until mostly absorbed by the rice.
  6. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the broth is mostly absorbed before adding the next ladle, which should take about 18-20 minutes.
  7. When the rice is al dente, stir in the chopped zucchini flowers, fresh basil, and parsley. Season with salt and black pepper to taste.
  8. Remove from heat and let the risotto sit for a minute before serving.
