- Zucchini flowers - 100 grams, cleaned and chopped
- Vegetable broth - 500 ml, heated
- Olive oil - 2 tablespoons
- Shallot - 1 small, finely chopped
- Garlic - 1 clove, minced
- White wine - 50 ml (optional)
- Fresh basil - 5 grams, chopped
- Fresh parsley - 5 grams, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the vegetable broth and keep it warm over low heat.
- In a large pan, heat the olive oil over medium heat, then add the chopped shallot and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Stir in the Arborio rice and toast for about 2 minutes, stirring frequently until the rice becomes slightly translucent.
- Pour in the white wine (if using) and let it simmer until mostly absorbed by the rice.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the broth is mostly absorbed before adding the next ladle, which should take about 18-20 minutes.
- When the rice is al dente, stir in the chopped zucchini flowers, fresh basil, and parsley. Season with salt and black pepper to taste.
- Remove from heat and let the risotto sit for a minute before serving.
