- Arborio rice - 160 grams
- Fresh asparagus - 200 grams, trimmed and cut into 2 cm pieces
- Vegetable broth - 500 ml
- White onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Olive oil - 2 tablespoons
- Parmesan cheese - 30 grams, grated
- Lemon zest - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, bring the vegetable broth to a simmer over low heat.
- In a separate large pan, heat the olive oil over medium heat and add the chopped onion. Sauté for about 3-4 minutes until the onion is translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the Arborio rice and toast it for about 2 minutes, stirring frequently until the rice is slightly translucent.
- Begin adding the simmering vegetable broth one ladle at a time, stirring continuously. Wait until the liquid is almost fully absorbed before adding the next ladle of broth.
- After about 10 minutes, add the asparagus pieces to the rice, continuing to add broth and stir until the rice is creamy and al dente, about 15 minutes total cooking time.
- Once the rice is cooked, remove the pan from heat and stir in the grated Parmesan cheese and lemon zest. Season with salt and black pepper to taste.
- Serve immediately, garnishing with extra Parmesan if desired.
