  • Vegetarian sausage - 200 grams, crumbled
  • Vegetable broth - 750 ml
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • White wine - 100 ml
  • Parmesan cheese - 50 grams, grated (or a vegetarian alternative)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened and translucent, about 3-4 minutes.
  3. Add the crumbled vegetarian sausage to the skillet and cook for another 5 minutes, stirring occasionally until browned.
  4. Stir in the Arborio rice, toasting it for about 1-2 minutes until it becomes slightly translucent.
  5. Pour in the white wine and cook until it has mostly evaporated, stirring frequently.
  6. Begin adding the warm vegetable broth, one ladle at a time, stirring continuously. Allow the rice to absorb the liquid before adding the next ladle. This process should take about 18-20 minutes until the rice is creamy and al dente.
  7. Once the rice is cooked, remove from heat and stir in the grated Parmesan cheese. Season with salt and black pepper to taste.
  8. Serve immediately, garnished with chopped fresh parsley.
