Ingredients

  • Arborio rice - 150 grams
  • Chicken broth - 500 ml
  • Dry white wine - 100 ml
  • Shallot - 1, finely chopped
  • Unsalted butter - 30 grams
  • Olive oil - 1 tablespoon
  • Saffron threads - 0.1 grams
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a small saucepan, heat the chicken broth over low heat and add the saffron threads, allowing them to steep.
  2. In a medium saucepan, heat the olive oil and 15 grams of butter over medium heat. Add the chopped shallot and sauté until translucent, about 2-3 minutes.
  3. Add the Arborio rice to the shallots, stirring for about 1-2 minutes until the rice is lightly toasted.
  4. Pour in the dry white wine and stir until it is absorbed by the rice.
  5. Begin adding the warmed saffron-infused chicken broth, one ladle at a time, stirring frequently until the liquid is mostly absorbed before adding the next ladle. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
  6. Once the rice is cooked, remove the saucepan from heat and stir in the remaining 15 grams of butter and the grated Parmesan cheese. Season with salt and black pepper to taste.
  7. Plate the risotto, garnish with fresh parsley, and serve immediately.
