- Dry white wine - 100 milliliters
- Lemon juice - 30 milliliters
- Lemon zest - 1 teaspoon
- Shallot, finely chopped - 1
- Garlic, minced - 1 clove
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
- Parmesan cheese, grated - 30 grams (optional for kosher)
Steps
- In a saucepan, heat the vegetable broth and keep it warm over low heat.
- In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the Arborio rice to the skillet, stirring to coat the grains with oil, and toast for about 2 minutes until slightly translucent.
- Pour in the dry white wine, stirring until it is mostly absorbed by the rice.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the broth is mostly absorbed before adding the next ladle. Continue this process for about 15-20 minutes until the rice is creamy and al dente.
- In the last 5 minutes of cooking, stir in the shrimp, lemon juice, lemon zest, salt, and pepper. Cook until the shrimp are pink and cooked through.
- Remove from heat and stir in the chopped parsley and grated Parmesan cheese if using. Adjust seasoning to taste.
- Serve immediately, garnished with additional parsley and lemon zest if desired.
