Ingredients

  • Arborio rice - 150 grams
  • Large shrimp, peeled and deveined - 200 grams
  • Vegetable broth - 500 milliliters
  • Dry white wine - 100 milliliters
  • Lemon juice - 30 milliliters
  • Lemon zest - 1 teaspoon
  • Shallot, finely chopped - 1
  • Garlic, minced - 1 clove
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Parmesan cheese, grated - 30 grams (optional for kosher)

Steps

  1. In a saucepan, heat the vegetable broth and keep it warm over low heat.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until translucent, about 3-4 minutes.
  3. Add the Arborio rice to the skillet, stirring to coat the grains with oil, and toast for about 2 minutes until slightly translucent.
  4. Pour in the dry white wine, stirring until it is mostly absorbed by the rice.
  5. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the broth is mostly absorbed before adding the next ladle. Continue this process for about 15-20 minutes until the rice is creamy and al dente.
  6. In the last 5 minutes of cooking, stir in the shrimp, lemon juice, lemon zest, salt, and pepper. Cook until the shrimp are pink and cooked through.
  7. Remove from heat and stir in the chopped parsley and grated Parmesan cheese if using. Adjust seasoning to taste.
  8. Serve immediately, garnished with additional parsley and lemon zest if desired.
