- Shallot - 1 small, finely chopped
- Garlic - 1 clove, minced
- Vegetable broth - 500 ml
- Parmesan cheese - 50 grams, grated
- Mozzarella cheese - 50 grams, shredded
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the vegetable broth over low heat and keep it warm.
- In a large skillet, melt the butter and olive oil over medium heat.
- Add the chopped shallot and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and sauté for an additional minute until fragrant.
- Add the cauliflower rice to the skillet and stir well to coat with the butter and oil mixture.
- Pour in a ladleful of warm vegetable broth and stir until the liquid is mostly absorbed.
- Continue to add the broth, one ladle at a time, stirring frequently, until the cauliflower rice is tender and creamy, about 15-20 minutes.
- Once the cauliflower rice is cooked, stir in the grated Parmesan and shredded mozzarella cheese until melted and creamy.
- Season with salt and black pepper to taste.
- Remove from heat and stir in the chopped parsley before serving.
